The Wolfburn Distillery, reborn in 2013, has its roots in a long-lost distillery that ceased operations around 1850. The Kylver Series is expected to expand as Wolfburn continues its journey, with each release charting a new chapter. The second release, named "Uruz," translates to "Aurochs or Wild Ox" and is double distilled in small stills before being aged in specially selected oak casks. This expression is bottled in its natural color, attesting to the authenticity and purity of Wolfburn's craft. In 2017, this remarkable whisky retailed in Germany for approximately €150 - €160. The Kylver Series 2 has been praised for maintaining its distinctive Wolfburn identity, despite the influence of the casks. The nose presents an inviting bouquet of stone fruits such as mango and peach, complemented by juicy pears, melon, a hint of lime, and green banana. This tropical aroma is balanced by earthy and peaty undertones, transitioning into candied fruits like pineapple and coconut, with a touch of mildly burnt brown sugar. On the palate, it is pleasantly oily and piquant, with notes of ginger and pepper, and a smoky touch that subdues the fruitiness. This special release was bottled for the Caithness Viking Festival and was exclusively available at the distillery and a shop in Thurso. The Vikings, who ruled Caithness until 1266, introduced runes to Thurso. The Kylver Series pays homage to this heritage, with the first complete 24-character rune series discovered on a tombstone in southern Sweden in 1903. The name "Kylver" is derived from the nearby Kylver farm, and the historic Kylverstein stone serves as the inspiration for this series.
