The White Peak Wire Works STR & Bourbon Cask Single Malt Whisky is a distinguished release from the White Peak Distillery, founded by Claire and Max Vaughn in Ambergate, Derbyshire, England, in 2016. Nestled by the River Derwent, the distillery began crafting English single malt whisky in 2018 and also produces rum and Shining Cliff gin. This third small batch release of Wire Works Single Malt Whisky combines 80% unpeated and 20% peated English barley, resulting in a phenol level of around 11ppm. Following a four-day fermentation period using a unique yeast blend, which includes live yeast from the nearby Thornbridge Brewery, the spirit is matured in a mix of first-fill ex-bourbon, virgin oak, and STR red wine casks made from American and French oak. The whisky is aged for approximately 4 years, with a predominant use of STR casks complemented by a significant amount of ex-bourbon casks. The final product is a lightly peated single malt, bottled at 46.2% ABV, and free from artificial color and chill filtration. Limited to 4323 bottles, this no-age-statement single malt offers a choice of versions—one with a presentation box and one without. STR stands for scraped, toasted, and re-charred, which adds unique depth to this exceptional whisky.
