The Spirit of Dublin Irish Poitin is a unique offering from the Teeling Whiskey Distillery, located in Ireland. This exceptional spirit showcases the traditional craftsmanship Teeling is known for, featuring a blend of 50% unmalted and 50% malted barley. The unmalted barley is sourced directly from local farmers, while the malt is acquired from malt houses. The distillation process leverages state-of-the-art equipment, with the milling and mashing equipment originating from the renowned German firm Steinecker. The distillation is carried out in three stills—Wash Still, Intermediate Still, and Spirit Still—crafted by the Tuscan company Frilli. The distillery takes pride in using both Douglas fir and stainless steel fermenters, with a total of four fermenters in operation. The maturation process predominantly occurs in ex-bourbon casks, but ex-sherry casks and some old wine casks are also used, adding to the complexity. While the distillation occurs in Dublin, the barrels are aged in a large warehouse in Muchgrange due to space requirements.
