This seven-year-old blended Irish whiskey from the Pearse Lyons Distillery is a delightful expression matured in a combination of ex-bourbon and ex-sherry casks. Pearse Lyons, a whiskey entrepreneur, had a unique vision when he began crafting whiskey in Ireland. In 2011, he imported a Wash Still and a Spirit Still from Kentucky. Rather than setting up shop in any ordinary building in Dublin, Pearse chose the historic St. James’ Church, a Gothic structure built in 1860. The church, with its copper stills installed in the altar area, was fully restored and repurposed. For the Pearse 7-year-old Blended Whiskey, affectionately called "Distiller's Choice," both in-house malt whiskey and externally sourced grain whiskey are used. This blend is aged primarily in ex-bourbon casks, with some maturation in ex-sherry casks for added complexity.
