The GlenWyvis 2018 release is the second bottling from the crowdfunded GlenWyvis Distillery, located near Dingwall in the north of Scotland. This expression marks the distillery's first major bottling from the 2018 vintage. Matured on-site for three years in their dunnage warehouse, this whisky is a testament to their dedication to quality and craft. Using a combination of 60% First Fill Tennessee Whiskey Casks, 25% First Fill Oloroso Casks, and 15% refill Scotch Whisky Casks, the result is a complex mixture of flavors with a unique character. The Tennessee Whiskey Casks impart a complex sweetness, while the First Fill Oloroso Casks contribute rich fruit notes, and the refill Scotch Whisky Casks add fragrant, spicy undertones.
The production process involves half-tonne mashes of locally sourced Concerto barley, fermented for an average of 96 hours. Distillation occurs in the distillery’s 2500L wash still and 1700L spirit still, with the hearts cut filled into the varied casks. The Tennessee Whiskey barrels from America enhance the sweetness, the Oloroso hogsheads from Spain provide rich fruit flavors, and the refilled Scotch whisky hogsheads highlight the fragrant, spicy character of the unique new make.
The nose of the GlenWyvis 2018 release is particularly rich and sweet, with notes of white grapes. The palate offers zesty lemon, vanilla, and ripe pears, leading to a long finish full of sumptuous dark chocolate and fresh berries. This second-ever release from GlenWyvis distillery saw 8,000 bottles produced in 2022, showcasing the impressive results of their crowdfunded efforts.
The maturation involved 60% First Fill Tennessee Whiskey Casks, 25% First Fill Oloroso Casks, and 15% refill Scotch Whisky Casks.
