Daftmill 2007 Winter Batch Release is a limited edition whisky from the family-owned and operated Daftmill Distillery, nestled in the Kingdom of Fife, Scotland. This distillery is renowned for its traditional production methods and operates only during the farm's quiet periods, producing as few as 100 casks per year. The barley used in this whisky, of the Optic variety, was cultivated on the distillery's estate, harvested in August 2006, and malted in Alloa during the summer of 2007. This release comprises seven first-fill ex-bourbon barrels (047/2007, 048/2007, 049/2007, 051/2007, 051/2007, 052/2007, and 053/2007) that were distilled and filled on Hogmany, the 31st of December, 2007. Bottled in 2020, a total of 1,690 bottles were made available. The barley used in this whisky was grown in the distillery's South fields and harvested in the last week of August 2006. Daftmill is one of the nine active distilleries in the Lowlands, distinguished by its adherence to traditional production methods. The distillery was granted a license on St. Andrews Day in 2005, with the first distillation taking place in December that same year. When not distilling, the Cuthbert family tends to the estate and cultivates the malting barley used to produce this exceptional Lowland whisky.
