The whisky embodies the quintessential characteristics of our distillery, known for its rich and fruity single malt spirit. The maturation process in premium American oak barrels imparts a symphony of flavors, including luscious notes of vanilla, honey, and malt sugars, complemented by the occasional hint of coconut. Our Bourbon Cask Single Malt is crafted from 100% locally grown, traditionally floor-malted barley from the Cotswolds, and the fermentation process utilizes two complementary yeast varieties - Anchor and Fermentis - to ensure excellent yields and fruity flavors. The water used is sourced from the village supply, filtered, softened, and demineralized before use. The premium first-fill ex-Bourbon casks used in the maturation process are sourced from Kentucky and made from American white oak (Quercus alba). These barrels are not steamed, arriving still moist with their staves soaked in Bourbon whisky, ensuring maximum flavor extraction during maturation. Bottled non-chill filtered and without added coloring, this whisky delivers an authentic and unadulterated taste experience. Best enjoyed on its own, but feel free to savor it over ice or in a cocktail. However you choose to drink it, this whisky is a delight for purists and a wonderful expression of the Cotswolds Distillery's character.
