The Bimber Oloroso Cask Small Batch No.4 is a single malt whisky hailing from the esteemed London-based Bimber Distillery. This extraordinary expression is crafted from a vatting of the distillery's oldest first-fill American Oak ex-bourbon cask whiskies from 2017. Established in 2015, Bimber Distillery sources its malt from Warminster Maltings and employs customized alembic pot stills to produce fruit-forward, textured, and layered spirits.
This fourth batch offers an intricate bouquet of green apple peels, dried stone fruits, milk-soaked cereals, and vanilla, evolving into a palate rich with orchard fruits, cooked apricot, charred oak, and pepper. The whisky's maturation journey began in first-fill ex-bourbon casks before being finished in Spanish oloroso sherry casks, imparting layers of creamy vanilla, caramel, fruitcake, and walnuts that linger elegantly in the finish.
Limited to just 975 bottles, this small batch release was meticulously crafted from ex-bourbon casks, finished in Spanish oloroso sherry butt. It offers a silky texture, distinctive fruit-focused character, and layers of deep, sweet richness. Bimber Distillery uses direct fire to heat their small copper pot stills and matures the spirit in hand-selected casks. The whisky is expertly blended and bottled on-site at the distillery, with this batch being bottled on 22nd March 2021.
During the resting phase, the complexities of each individual cask harmonize within the distillery's in-house constructed American oak marrying vat. This process results in a whisky that possesses balance, depth, and character, while preserving the distinctive spirit of Bimber's whiskies.
This whisky is unique due to its maturation process, starting in first-fill ex-bourbon casks and finishing in Spanish oloroso sherry casks, creating a complex and rich flavor profile.
