This clairin vieux is derived from a blend of 18 casks from the 2018 vintage, each previously housing Bielle rums, Caroni, and single malt whisky. Using a single variety of sugarcane called "Cristalline", which is cultivated without fertilizers, pesticides, or other chemicals, the rum is distilled in a pot still after fermentation with native yeasts. It is then aged for five years in both American bourbon casks and former rum casks from prestigious distilleries like Mount Gay, Bielle, and Caroni. The result is a rum that exudes intense and authentic aromas and flavors, featuring distinct notes of kiwi, gummi, geranium, and sugarcane, with additional herbal, floral, and grassy undertones. What an extraordinary nose! Very reminiscent of Jamaican rums with a lot of alcohol (esters) but without the varnish, giving it a remarkable nose! The palate is also alcoholic but surprisingly chewy, delicious, and even finishes on a very pastry-like note! Superb. It brings back what we loved from the 2017 ex-Caroni with a gourmet, saline, and licorice finish.
