Distilled by the Chelo distillery in Saint Michel de l'Attalaye, this exquisite rum is crafted using rare and ancient Cristalline sugar cane. The sugar cane is non-hybrid and cultivated without fertilizers, pesticides, or chemicals, ensuring a natural and organic production process. Manually harvested and transported to the distillery by oxen-drawn carts, the sugar cane undergoes spontaneous fermentation with native yeasts. Distillation is performed in pot stills heated by direct fire. This second release results from a blend of 12 casks that previously contained either single malts or other rums. Distilled in 2017 and bottled on-site in 2021, this rum is presented at its natural strength of 56.3% ABV. The unique use of Cristalline sugar cane and spontaneous fermentation imparts a complex aromatic profile to the rum. This pure sugar cane juice rum is signed by Michel Sajous and bottled in the iconic black bottle, symbolizing its exceptional quality and traditional production methods. Limited to just 1,200 bottles, this rum is a rare gem for connoisseurs and collectors alike.
