The aroma is rich and slightly smoky, with a copper hue reminiscent of the still. The initial burst of fruity aromas includes blackberry, blackcurrant, and redcurrant, followed by a unique bitterness from stone fruits. An explosion of tropical fruits ensues with overripe, organic, and green olive notes, leading to a touch of acidity reminiscent of green apple.
On the palate, there is a balance of sweetness and extreme concentration. A myriad of flavors including jackfruit, poached pears, almond milk, candied cherries, raisins, and overripe pineapple are complemented by a hint of green olive brine.
Distilled in June 2011, this rum spent 7 years aging in the tropics before undergoing an additional 3 years of aging in a continental climate in Europe. It was bottled at cask strength in August 2021, reaching the 10-year mark.
Aeration releases spicier and drier, vegetal notes along with a touch of leather. The rum becomes more assertive, yet maintains its pastry-like profile, leaning towards candied fruits over copper or tapenade.
The rum is aged for a total of 10 years, with 7 years in the tropics and an additional 3 years in a continental climate.
This rum has an ABV of 67.4%.
Only 324 bottles were produced.
