The Neisson XO 50.8% 700ml rum is a highly savory and intense product, yet not overpoweringly so. The oak is slowly revealed, enveloping and invading the palate with its natural, lightly resinous fiber, accompanied by flashes of grilled nuts as rich and fragrant as caramel formed on the surface of the barrel. Exotic nuts are toasted, enveloped in caramel. Spices settle on the tongue, subtly warming or cooling it.
The rum opens with a fairly fierce oak flavor, well-heated and blackened by flame, but it does not prevent the fresh sugarcane juice from expressing itself in a delightful manner. It carries all the scents of the sugarcane field and its surroundings: exotic orchards, tropical undergrowth, and fragrant flowering meadows.
With a little air, the typical gourmet oak flavor of the house emerges. It is an oak to chew on, with a fruit paste and nougatine filling. The richness of this oak extends to evoking peanut butter.
This second batch (Batch 2) is equally successful, with a little more strength and a hint of smoke. This batch is probably broader and fruitier, but the thick oak flavor, reminiscent of fruit paste, so cherished by Neisson, remains the same.
