The Ferroni Thailande Fonde A Marseille Repose en Dame Jeanne No.5 is a unique collaboration between Marseille and the beautiful region of Issan, Thailand. Due to Thai laws, spirits cannot be distilled above 40%, but the two partners, Guillaume Ferroni and David Giallorenzo, found a way around this. The sugar cane juice was first distilled in a pot still at David's distillery in Issan. The resulting wash was then shipped to Aubagne, where Guillaume performed a second distillation in a pot-still.
The resulting rum is round, yet packs a punch of freshness and intensity. The sugar cane flavor clings to the palate, with a smooth and thick texture. It releases flavors of sugar cane and caramelized sugar.
The aroma is incredibly smooth, with a tender sugar cane candy sweetness. Flavors of nougat, caramelized sugar, and sugar cane follow, each one building on the last, creating a cloud of comforting sweetness.
Aeration brings the focus back to the sugar cane, still ripe and a bit more vegetal. A hint of citrus, plump with sugar, appears, adding a touch of brightness.
The rum has also benefited from a rest in a dame-jeanne (demijohn) under the sun of Provence, giving it a rich, full-bodied texture and even more length on the finish.
