This mono-varietal rum was distilled in a copper creole column still at the Distillerie du Simon, located on the island of Martinique. The Blue Canne used in this rum is named for its abundant wax coating that gives it a bluish hue. The rum was aged for over 4 years in a unique American oak barrel, numbered 20130049.
With a little aeration, the oak becomes more prominent, joined by rich almond and hazelnut notes, reminiscent of peanuts. Green, resinous tannins mingle with the vegetal freshness of the sugarcane, adding a lively and dry character.
The rum offers a sweet sugarcane juice that is still bright and fresh, filled with herbaceous flavors, citrus zest, and spicy pepper bark. These flavors gradually become coated in a layer of tender wood, sweet spices, and a round, oily texture.
