The sugarcane juice is fermented using wild yeasts before undergoing discontinuous distillation in a pot still heated over an open fire. The artisanal production of this rum is supervised by Michel Sajous himself.
The 2021 harvest of Clairin Sajous is produced at the Chelo distillery, located in the north of Haiti, in the commune of Saint-Michel de l'Attalaye. This rum is made from a specific variety of sugar cane, which is harvested between December and August and fermented using wild yeast for up to one week.
