This premium rum is aged in French oak barrels for 18 months, followed by a six-month maceration of natural spices, including cinnamon, to create a rich and complex flavor profile. The distillation process, which includes the use of copper column stills for White Rum and double distillation in two 20HL copper stills for Double Distillation Rum, ensures optimal quality and remarkable finesse by carefully separating heads, hearts, and tails.
On the nose, the rum is fragrant and round, with a spicy veil of incense and exotic fruit aromas. The fruit is very ripe, as if freshly picked from a tropical orchard. With a little air, more complex, almost medicinal and camphor notes appear. On the palate, the rum first alerts the senses with a perfume of tobacco and a hint of lime zest bitterness. The spicy side is expressed through a very dark cocoa, followed by a herbaceous aspect of dried herbs. The rum is then aged for an additional two years under a tropical climate, resulting in a smooth and well-rounded finish.
